How To Cook Medovik: Delicious Russian Honey Cake Made Easy
Learn to cook the famous Russian honey cake Medovik with this easy step-by-step guide.
Medovik derives its name from the word “мед” = “honey”, “medovik” means “made with honey”.
Ingredients for Medovik
- Flour / Мука — 400-500 gr
- Butter / Сливочное масло — 100 gr
- Eggs / Яйца — 2 pc
- Sugar / Сахар — 200 gr
- 1 table spoon of bicarbonate / 1 столовая ложка соды
- 2 table spoons of honey / 2 столовых ложки меда
How to cook Medovik – recipe step-by-step
Preparation time:
20 min + waiting time 30 min + baking time approximately 15 min per layer at 250C.
In total:
Time needed (minimum, depending on the number of layers) : 2 hours
1st step to cook Medovik is making the dough
Melt sugar with butter and honey, let the mixture cool down
Mix eggs and bicarbonate
Put eggs and bicarbonate into the bowl, mix them with the mixer
Add flour into the mixture
Add the flour slowly, a small portion at a time and mix well
Mix the dough
Mix the dough with your hands, then put the dough into the fridge for 30 min
Prepare the layers
Cut the dough in pieces and make individual layers.
Bake separately.
Prepare the cream
Whip sour cream with sugar with the help of a mixer
Put the cream on layer after layer
Spread the cream on each layer and press well when placing every new layer
Tip 1 – Healthy no-cream option
If you don’t wanna put cream (and extra calories :), you can bake the dough just as it is – it is very tasty without anything else.
Use a glass or any other baking form to prepare cookies.
Tip 2 – Intensify the taste with other ingredients
When preparing the dough or the cream, you may wanna add chopped smoked prunes, goji berries, raisins or nuts for more intense taste
Decorating the cake
Keep one of the layers for decoration.
Shred the baked layer into crumbles and scatter the crumbles onto the upper layer and the sides on top of the cream.
Voilà, your Medovik (Honey Cake Russian Style) is ready!
Let it cool down and soak for at least 2h in a cool place, preferably your fridge. The best Medovik is the one that stayed in the fridge over night:)
